La Gran Mesa de México culinary summit in Cuernavaca, Digi Mart USA News (Cuernavaca, Morelos, Mexico): The Government of Morelos is inviting the public to La Gran Mesa de México, the Ibero-American Summit of Territorial Cuisine, from November 6 to 8, from 10:00 a.m. to 6:00 p.m., at the General Emiliano Zapata Salazar Plaza in Cuernavaca.

The event will feature a large dining area and a market where families, visitors and traditional cooking practitioners can gather. Attendees can sample recipes from different regions, learn about ingredients and hear the stories behind each preparation.

Organized by the administration of Governor Margarita González Saravia as part of the “Xochicalco, Land of Encounters” program, the first edition will include 11 traditional cooks from Morelos. Representatives from Guerrero, the State of Mexico, Mexico City, Tlaxcala, Puebla, Nayarit and Quintana Roo, among other states, will also participate, along with four cooks from Veracruz, the guest state, and paella makers from Spain.

The celebration will also include 20 producers and 20 artisans, who will be able to talk with attendees, explain the origin of their products and sell directly to buyers. State officials said the space is intended to bring their work to new consumers and create income opportunities for communities that have preserved these ingredients and crafts for generations.

Tourism Secretary Daniel Altafi Valladares said the summit will also give the sector a chance to be heard. “We are going to deepen the gastronomic work.

We are going to analyze and understand what is needed to strengthen traditional cuisine and how to better support cooks,” he said. Conferences and panels with academics, specialists, regulatory councils and gastronomy representatives will be held, and their conclusions will be compiled into a manifesto to follow up on agreements toward 2027.

The event expects more than 10,000 attendees and an estimated economic impact of more than 10 million pesos. Admission is free, while food and products will be available for purchase.

Organizers invite families to tour the plaza, meet the cooks and choose among specialties from different regions.
