Maison Complices artisan bakery and pastry shop in Vincennes, Digi Mart USA News (Vincennes, France): Maureen Guéguin discovered pastry making as a child while helping her mother prepare family meals, and by age 8 she was making yogurt cakes on her own. As a teenager, television programs convinced her that pastry was her calling, and she went on to earn a CAP and a Master in pastry from the École Ferrandi, then refined her skills in France and abroad, including at Ducasse, Fouquet’s and with Yann Couvreur.

Manon Tronel initially viewed pastry as a hobby for surprising her family. After impressing her uncle, a restaurateur, she was taken on for an internship at age 14, which led her to apply to specialized schools and earn a professional baccalaureate from the École Ferrandi.

She later worked for Robuchon and within the Bocuse group, then joined Yann Couvreur’s establishment as production manager supervising 50 pastry chefs, where she said she learned the skills needed to become an entrepreneur.

In 2025, the two friends, who met as teenagers during their apprenticeship in a neighborhood bakery, opened Maison Complices together in Vincennes. The shop’s pastries combine subtle flavors and textures, and classics such as the meringue-topped yuzu lemon tart, a best-seller, receive a distinctive touch.

Guéguin said it took three months to achieve the right balance for the flan.

The bakery also produces naturally leavened breads shaped by hand, all-butter viennoiseries, brioches including a pistachio version, cheesecakes, seasonal fruit entremets and pistachio éclairs. The founders say the raw materials are selected with the same rigor they experienced in starred restaurant kitchens.

The shop features a terrace, an elegant boutique and a team the founders describe as service-oriented.

With the arrival of a chef trained in starred kitchens, Maison Complices, which grew from 5 to 15 employees in one year, plans to expand its savory range with homemade prepared dishes made from fresh products, offered to take away or eat on site. The shop also offers savory and sweet canapés, wedding centerpieces and personalized cakes for birthdays.

The business is located at 30, rue de Montreuil, 94300 Vincennes.
